Last Night’s Dinner #5
I decided to take
dinner to a lighter level and really soak up the freshness of summer by
incorporating fruit as the meals cornerstone. Chunks of ripe juicy watermelon served
as the side to the warm moist Sour Cream Peach Cake; the peach flavor bursting
in your mouth when you bite into a piece of the sweet fruit nestled into the ridiculously
soft cake. You want contrasting textures? Well if moist soft cake and crisp
watermelon isn’t enough contrast, what about the Oatmeal Nut topping that
blanketed the top of the cake? Walnuts and almonds mixed in with oatmeal and
butter, all caramelized in sugar; this topping was crunchy, crumbly, and sweet,
with a little chew of sticky goodness. Yum!!!
