I was craving a breakfast burrito (I hate
saying that word because growing up it was a taco, but I won’t go off on
my normal rant of taco vs. burrito because folks will think I’m crazier
than I am) and so I made some up for
the family. I kept it simple with potatoes, eggs, cheese, and tomatoes
in a flour tortilla. The meal is easy and quick, in part because I
parboil the potatoes as part of the prep. Pan to plate in no time at
all.
